Cooking on the Go

A favorite pastime for my husband and me is to go camping with several other couples. On these outings, we rotate the cooking responsibilities. We enjoy whipping up meals for our group of friends. We have the smallest camper in the entire group—a pop-up camper with an itty-bitty refrigerator. Out of this small “kitchen” we like to create surprisingly impressive meals.

On one particular outing we were traveling over four hours to our camping destination. My husband and I had to work late, but we were able to join our friends for dinner. We volunteered to make the evening meal, but knew the timing would be a bit tricky. With our work schedules, we were not able to get to the campsite with enough time to prepare dinner on site. So, we had to make it on the go.

We got a converter plug for our truck. This helped to create a power source for our slow cooker. We plugged in the slow cooker and had dinner cooking on the floor in front of the backseat of the truck while we were driving to the campsite.

In my largest slow cooker I made a double recipe of Apples, Sauerkraut, and Chops from the Fix-It and Forget-It Big Cookbook on page 440. The only modification I made to the recipe was to use an oven roasting bag to guard against spills and to make the clean-up process easy. I had done this before, and I knew that these bags worked well as long as I poked holes in it for ventilation. Using this bag also allowed for proper browning of the dish.

The dinner was a success. The chops were moist and had wonderful flavor. The other couples always laugh when they remember our story of cooking on the go.

Make sure if you decide to cook while driving that the power outlet stays on if you are planning to make stops. Each converter plug works slightly differently. However, they all make it fun to make dinner on the go.
