It required very few ingredients and they won’t take up much space, which I know if a concern for those traveling. This is one of those recipes you could put in a foil packet and cook over a campfire as well. You know? You can even enjoy these Pizza Potatoes if you’re not on vacation or on a stay-cation! Makes 4–6 servings
Prep. Time: 15 minutes
Cooking Time: 6–10 hours
Ideal slow-cooker size: 4-qt.
6 medium potatoes, sliced
1 large onion, thinly sliced
2 Tbsp. olive oil
2 cups grated mozzarella cheese
2 oz. sliced pepperoni
1 tsp. salt
8-oz. can pizza sauce
1. If you have access to a stove top, sauté potato and onion slices in oil in skillet until onions appear transparent. Drain well. If not, skip to Step 2 and omit the oil.
2. In slow cooker, combine potatoes, onions, cheese, pepperoni, and salt.
3. Pour pizza sauce over top.
4. Cover. Cook on Low 6–10 hours, or until potatoes are soft.
