Ideal slow-cooker size: 3-qt.
2 (10-oz.) cans green enchilada sauce, divided
8 large tortillas, divided
2 cups cooked shredded chicken, divided
1½ cups mozzarella cheese
1. Pour a little enchilada sauce on the bottom of your slow cooker.
2. Layer 1 tortilla, 1/4 cup of chicken, and 1/4 cup of sauce into slow cooker.
3. Repeat layers until all 3 ingredients are used completely.
4. Sprinkle mozzarella cheese over top. 5. Cover and cook on Low 2–4 hours.
