Sometimes, you gotta spice things up with a little bit of fun, so knowing that Cinco de Mayo is coming up, I thought I’d share a quick and easy Mexican Dip with you so you can start planning your festivities! It’s also a great time to support your local businesses if they’re open for take-out that day! Maybe pick up some fresh tortilla chips on May 5 to go with your dip!

Makes 15 servings
Prep Time: 15–20 minutes
Cooking Time: 2–3 hours
Ideal slow-cooker size: 3-qt.
1 lb. low-fat ground beef or turkey
8-oz. pkg. grated low-fat Mexican cheese
16-oz. jar mild, thick and chunky picante salsa, or thick and chunky salsa
6-oz. can refried beans
1. Brown meat in nonstick skillet.
2. Place meat and remaining ingredients into your crock and stir.
3. Cover and cook on Low for 3 hours, or until all ingredients are heated through and melted.
