I hope you’re all holding up ok. We have been keeping ourselves busy here with a pretty structured homeschool schedule, with lots of family time included. We’re trying to see the positives in all of this. We continue to spend lots of quality family time together and are enjoying a slower paced life. We don’t have much of a choice, so we’re trying to make the most out of it. Today is my daughter’s 12th birthday. We’ve had lots of friends and family call, text, facetime and even drive by with signs, music and dancing! It’s been a lot of fun! My son (9) and I made her a special cake with lots of love and her favorite colors of course!

Dark Chocolate Lava Cake
Hope Comerford, Clinton Township, MI
Makes 8 servings
Prep Time: 5–10 minutes
Cooking Time: 2–3 hours
Ideal slow-cooker size: 4-qt.
1 cup dark cocoa powder
2⁄3 cup maple syrup
2⁄3 cup chopped dark chocolate, chopped into very fine pieces or shaved
1. Whisk the eggs together in a bowl and then slowly whisk in the remaining ingredients.
2. Spray the crock with nonstick spray.
3. Pour the egg/chocolate mixture into the crock.
4. Cover and cook on Low for 2–3 hours with some folded paper towel under the lid to collect condensation. It is done when the middle is set and bounces back up when touched.
