Faked You Out Alfredo

Ideal slow-cooker size: 3-qt.
1 lb. bag of frozen cauliflower
1 13½-oz. can light coconut milk
½ cup diced onion
2 cloves garlic, minced
1 Tbsp. vegetable stock concentrate
Salt and pepper to taste
1. Place the frozen cauliflower, coconut milk, onion, garlic, and the vegetable stock concentrate in your crock. Stir mixture to blend in the stock concentrate.
2. Cover and cook on Low for 6 hours.
3. Place cooked mixture in blender and process until smooth. 4. Add salt and pepper to taste.
Variation: Add cooked peas to sauce after pureeing other ingredients.
Serving suggestion: Serve over cooked pasta, cooked sliced potatoes, or any other vegetable.
