I don’t know why, but I LOVE asparagus, especially in the summertime. Don’t get me wrong, I’ll eat it year round, but it just “hits the spot” in the summer.
I’m bringing you a recipe for my Lemony Garlic Asparagus today because if you’re anything like me, you’re constantly on the go in the summer. You may even go camping or RVing! Well, this recipe is totally doable on the go! Have you ever even thought about slow-cooking while you’re camping?!!! Why not?! So easy and super convenient. It can cook while you have fun with your fellow campers.

Lemony Garlic Asparagus
Hope Comerford, Clinton Township, MI
Makes 4 servings
Prep time: 5 minutes
Cooking Time: 1½–2 hours
Ideal slow-cooker size: 2- or 3-qt.
1 lb. asparagus, bottom inch (tough part) removed
1 Tbsp. olive oil
1½ Tbsp. lemon juice
3–4 cloves garlic, peeled and minced
¼ tsp. salt
1⁄8 tsp. pepper
1. Spray crock with nonstick spray.
2. Lay asparagus at bottom of crock and coat with the olive oil.
3. Pour the lemon juice over the top, then sprinkle with the garlic, salt, and pepper.
4. Cover and cook on Low for 1½–2 hours.
