Shredded Lime Chicken

Ideal slow-cooker size: 3-qt.
1½ lbs. boneless, skinless chicken breasts
2 limes, juiced
1 Tbsp. chili powder
1 tsp. salt
2 tsp. fresh minced garlic
16-oz. jar salsa of your choosing
1 small onion, chopped
1 cup frozen corn
1. Place chicken breasts in crock.
2. In a bowl, mix together the remaining ingredients. Pour this over the chicken.
3. Cover and cook on Low for 5–6 hours.
4. Remove chicken and shred between two forks. Stir back through juices in the crock.
Serving suggestion: This is great in tacos or on top of nachos.
