Well, we made it through Easter and as April is coming to a close in Michigan, accumulated snow was expected last night. Thankfully, it didn’t happen in my town, or at least it’s all melted this morning so I can pretend like it didn’t happen! Hahahahaha! I’m So ready for Spring and Spring weather! I have some beautiful daffodils that are blooming in full-force and are helping it to feel a bit more like Spring around here.
Today I’m bringing you a recipe from Fix-It and Forget-It Favorite Recipes for Mom because Mother’s Day is happening in just a couple more weeks. It’s a simple Creamy Italian Chicken recipe which would be great to make for a crowd or for an intimate dinner at your house or mom’s. It goes beautifully alongside some simple green beans, rice of your choice and some homemade garlic bread. A simply delicious Mother’s Day Meal. And sometimes simple is best.

Creamy Italian Chicken
Jo Zimmerman, Lebanon, PA
Makes 6 servings
Prep. Time: 10 minutes
Cooking Time: 4 hours
Ideal slow-cooker size: 3-qt.
2 lbs. chicken tenders
1 envelope Italian salad dressing mix
¼ cup water
8-oz. pckg. cream cheese
1 can cream of chicken soup
1 can of mushrooms drained, optional
1. Place chicken in slow cooker.
2. Combine dressing mix and water. Pour over chicken.
3. Cover and cook on Low 3 hours.
4. Beat cream cheese and soup together and stir in mushrooms if you like. Pour over chicken and cook 1 hour longer.
Serve over rice.
