White Chicken Chili

Ideal slow-cooker size: 3-qt.
4 cups cubed cooked chicken
2 cups chicken broth
2 14½-oz. cans cannellini beans
14½-oz. can garbanzo beans
1 cup shredded white cheddar cheese
¼ cup chopped onion
¼ cup chopped bell pepper
2 tsp. ground cumin
½ tsp. dried oregano
¼ tsp. cayenne pepper
¼ tsp. salt
1. Combine all ingredients in slow cooker.
2. Cover and cook on Low for 5–6 hours.
Omit garbanzo beans. Shred chicken instead of cubing it. Add 1 tsp. Italian herb seasoning. —Beverly Hummel
