Quick and Light Sweet Potato Wedges

4 sweet potatoes, cut into wedges
2 Tbsp. olive oil
2 tsp. Italian seasoning
3 Tbsp. light gluten-free Italian dressing
1 Tbsp. minced garlic
1. Combine all ingredients in sealable plastic bag and shake well.
2. Pour into the slow cooker and cook on Low for 3–5 hours.
To make a dipping sauce, mix together Greek yogurt, Sriracha sauce, and minced garlic to taste.
