Chicken Rice Soup

Makes 8 servings
Prep Time: 30 minutes
Cooking Time: 4–8 hours
Ideal slow-cooker size: 4- to 6-qt.
4 cups gluten-free low-sodium chicken broth
4 cups cut-up chicken, cooked
1 1⁄3 cups cut-up celery
1 1⁄3 cups diced carrots
1 qt. water
1 cup uncooked long-grain rice
1. Put all ingredients in the slow cooker.
2. Cover and cook on Low 4–8 hours, or until vegetables are cooked to your liking.
