Ok husbands and kids, listen up! I’m bringing you a recipe today that is easy enough for anyone to make for mom, novice or not, for Mother’s day next weekend! That’s right! No excuses 😉 This Blueberry Fancy only takes about 10-15 minutes to prepare, so you can quickly assemble and get that slow cooker cooking!
Mother’s Day is on a Sunday this year, so here’s my suggestion: Wake up early, (mom is worth it!!!) assemble the Blueberry Fancy and get it cooking, then get ready for your day, go to church….and when you get home, BREAKFAST!!!!!
When you serve this, be sure to put out some beautiful fresh fruit, maple syrup, some tea or coffee (whichever mom prefers) or maybe even some fresh fruit juice! Mom will love the effort you made to make her morning special!

Makes 12 servings
Prep. Time: 10–15 minutes
Cooking Time: 3–4 hours
Ideal slow-cooker size: 5-qt.
1 loaf Italian bread, cubed, divided
1 pint blueberries, divided
8 ozs. cream cheese, cubed, divided
1½ cups milk
1. Place half the bread cubes in the slow cooker.
2. Drop half the blueberries over top of the bread.
3. Sprinkle half the cream cheese cubes over blueberries.
4. Repeat all 3 layers.
5. In a mixing bowl, whisk together eggs and milk. Pour over all ingredients in crock.
6. Cover and cook on Low until the dish is custardy and set, about 3-4 hours.
