If you’re like me, you always seem to have extra carrots lying hanging out in the refrigerator. I don’t know why this is? Maybe I forget that I have them and buy another bag every time I’m at the store? (I seem to do this with apples a lot too! LOL) Since carrots are amazing raw and cooked, it’s not a problem! I can always find ways to use them.

Honey-Orange Glazed Carrots
Hope Comerford, Clinton Township, MI
Makes 12 servings
Prep. Time: 5 minutes
Cooking Time: 8 hours
Ideal slow-cooker size: 5-qt.
3 lbs. baby carrots
2 Tbsp. freshly squeezed orange juice
½ cup honey
½ tsp. kosher salt
1∕8 tsp. pepper
2 Tbsp. coconut oil
½ tsp. orange zest
1. Spray crock with nonstick spray.
2. Place carrots in crock, then add remaining ingredients except orange zest.
3. Cover and cook on Low for 8 hours.
4. Stir in orange zest before serving.
