Question: Do you call them chickpeas or garbanzo beans?!!!! I grew up calling them chickpeas, but now I use the names so interchangeably I rarely think about it 😉
I originally created this recipe for my pregnant sister. She was craving a soup she had had at a restaurant and from what she described, I threw together….literally. LOL She enjoyed it so much, it became a keeper! I think it will become a keeper for your family too!

Chicken Chickpea Tortilla Soup

Makes 4–6 servings
Prep. Time: 5 minutes
Cooking Time: 6 hours
Ideal slow cooker size: 4-qt.
2 boneless skinless chicken breasts
2 14½-oz. cans petite diced tomatoes
15-oz. can garbanzo beans (chickpeas), drained
6 cups gluten-free chicken stock
1 onion, chopped
4-oz. can diced green chilies
1 tsp. cilantro
3–4 fresh garlic cloves, minced
1 tsp. sea salt
1 tsp. pepper
1 tsp. cumin
1 tsp. paprika
1. Place all ingredients in slow cooker.
2. Cover and cook on low for 6 hours.
3. Use two forks to pull apart chicken into shreds.
