Strawberry Mint Crisp – Gluten-Free, Dairy-Free, Vegetarian, Soy-Free, Nut-Free, Low-Fat, Low-Cal, Low-Sodium, Low-Sugar

Prep. Time: 20 minutes
Cooking Time: 2 hours
Ideal slow cooker size: 2- or 3-qt.
2½–3 cups sliced strawberries
1 tsp. cinnamon
½ tsp. mint extract
1 tsp. vanilla
3 Tbsp. fresh chopped mint
½ cup gluten-free oats
¼ cup gluten-free oat flour
½ tsp. cinnamon
¼ tsp. salt
1 Tbsp. honey
1 Tbsp. coconut oil, melted
1–2 Tbsp. unsweetened almond or coconut milk
1. Spray crock with non-stick spray.
2. In the crock, combine strawberries, cinnamon, mint extract, vanilla extract, and fresh chopped mint.
3. In a bowl, combine all the crumble ingredients. If it’s too dry, add a bit more honey or milk of your choice. Pour this mixture into the crock.
4. Cover and cook on low for 2 hours.
Serving suggestion: Serve with vanilla Greek yogurt.
