One of the things I love most about summer is the many outdoor gatherings. Barbecues, picnics, graduation parties, birthday parties, reunions…..you name it, I love it! (As long as the weather holds up!)
One of the best things about slow cooking is the portability! So many slow cookers now come with lids that are secured on with clips, or insulated carrying cases. I’ve been known to just tape my lid on while traveling 😉
Potato Salad is a outdoor gathering classic! With this version, you won’t have to worry about the mayo spoiling in the heat and giving everyone food poisoning! (You can ask my aunt about that one when she pretty much took out 50% of our family in one simple meal!!!!) This potato salad you can serve with confidence and everyone will love it!

German Potato Salad
Hope Comerford, Clinton Township, MI
Makes 6 servings
Prep. Time: 20 minutes
Cooking Time: 5 hours
Ideal slow-cooker size: 4-qt.
1½ lbs. red potatoes, coarsely chopped
1 medium onion, chopped
2 slices cooked bacon, chopped
1 cup chopped celery
¼ cup apple cider vinegar
2 Tbsp. whole-grain mustard
1 Tbsp. olive oil
½ tsp. sea salt
¼ tsp. pepper
1 Tbsp. cornstarch
1. Place potatoes, onion, bacon, and celery in crock.
2. In a small bowl, combine the apple cider vinegar, mustard, olive oil, salt, pepper, and cornstarch. Pour this over the contents of the crock and stir.
3. Cover and cook on Low for 5 hours or until potatoes are tender.
