One of my favorite go-to recipes for the week is Spaghetti. The kids love and my husband and I love it. Even when we were in college and newly married, it was a staple. My husband knew how to cook 2 things when we met; sloppy joes and spaghetti! So, we at A LOT of it!
Fast forward a few years until after my kids were born and I found out I had a severe gluten intolerance. Gluten-Free pasta is not always better for you than whole wheat pasta and my husband and I started got tired of the spaghetti “falling apart” like many brands of gluten-free pasta does! As I looked for another alternative, I knew quinoa was super good for you and I wondered if it might make an acceptable replacement for the lackluster GF pasta! Sure enough, it did!
This Turkey “Spaghetti” Quinoa pasta is now one of our family favorites. You won’t even miss the noodles. Quinoa is high in protein, amino acids and fiber. You’ll love the amazing benefits of it and you’ll love that you can feel good about giving your family and delicious and healthy dinner!

Turkey “Spaghetti” Quinoa

Makes 8–10 servings
Prep. Time: 10–15 minutes
Cooking Time: 5 hours
Ideal slow cooker size: 5- or 6-qt.
2 lbs. lean ground turkey
½ tsp. salt
1/8 tsp. pepper
1 tsp. garlic powder
1 tsp. onion powder
1 cup quinoa
1 cup chopped onion
1 cup shredded mozzarella cheese (for dairy-free, substitute with dairy-free cheese or leave out)
4 cups tomato sauce
2 cups water
1. Brown turkey with the salt, pepper, garlic powder, and onion powder.
2. Spray crock with non-stick spray.
3. Place ground turkey in bottom of crock. Top with quinoa, onion, and shredded mozzarella.
4. Pour tomato sauce and water into crock. Stir so everything is mixed.
5. Cover and cook on low for 5 hours.
