Simply Saucy Potatoes #1

It’s February. We’re tired of cold days and long nights. We’re craving comfort food, and the sooner the better.

If you could use a little mid-winter comfort, too, why not throw a batch of Simple Saucy Potatoes in the slow cooker? They make a decadent and delicious side dish to accompany any meat, but we’re seriously contemplating making them the main course.

And we’re feeling happier just thinking about it!

Simple Saucy Potatoes
Fix-It and Forget-It 5-Ingredient Favorites, page 183
Makes 8-10 servings
Prep Time: 15-20 minutes
Cooking Time: 4-5 hours
Ideal slow cooker size: 5-qt.

10 bacon slices
4 15-oz. cans white potatoes, drained
2 10 ¾ -oz. cans cream of celery soup
2 cups sour cream
6 green onions, thinly sliced

1. Brown bacon in non-stick skillet. Drain. Crumble and set aside.
2. Place potatoes in slow cooker.
3. In a large bowl, combine remaining ingredients, including the bacon. Pour over potatoes and mix well.
4. Cover and cook on High 4-5 hours, or until potatoes are cooked through.

    I’m curious. Why do you have to cook “4-5 hrs on high” if you’re using fully-cooked canned potatoes?

    How long would cooking time be if I used fresh potatoes?

    I’m trying this only cooking on low due to the fact that the potatoes are already cooked.

    Wouldn’t canned potatoes be mushy after cooking on high 4-5 hrs.?

    Mine so far on med to low is really tunny?????? I did not change the recipe except to cook on a lower temp.
