Have you ever contemplated an artichoke and wondered, “How, exactly, does one approach this thing?”

Here, in a few easy steps, we show you how to take on an artichoke and win. As you might expect, the process involves the slow cooker. Read on to find out how.

Makes 4 servings
Prep. Time: 10 minutes
Cooking Time: 2-10 hours
Ideal slow-cooker size: 4-qt.

Ingredients:
4 artichokes
1 tsp. salt
2 Tbsp. lemon juice

1. Wash and trim artichokes by cutting off the stems flush with the bottoms of the artichokes

and by cutting ¾-1 inch off the tops.

Stand upright in slow cooker.

2. Mix together salt and lemon juice and pour over artichokes. Pour in water to cover ¾ of artichokes.

3. Cover. Cook on Low 8-10 hours or on High 2-4 hours.

Serving suggestion: Serve with melted butter. Pull off individual leaves and dip bottom of each into butter. Using your teeth, strip the individual leaf of the meaty portion at the bottom of each leaf.

    We steam artichokes once or twice a year a family favorite at my house, we serve ours with mayo. Excited to see I could make these in the slow cooker, great idea.

    We stuff our artichokes but I never have tried in slow cooker. Just may have to try that !!!

    Stuff the artichokes with Italian seasoned bread crumbs, parmesan cheese and olive oil drizzle. Cook in tomato sauce. Delicious!

    Great post – I will now have to buy them! Not sure how you ‘stuff’ them, so perhaps those that have done that might provide some detail for a novice like myself who has never cooked an artichoke :) – do you just put stuff between the leaves?
