In the mood for some Mexican-inspired dishes? Try these wonderful slow cooker favorites!

Use your slow cooker to turn out tasty side dishes while your oven is otherwise occupied.
California Blend Bake is an easy way to dress up a frozen vegetable medley. Time the preparation to coincide with whatever is in the oven, and let the appliances do the rest. You get to spend your time doing something else.
When everything is done, add a fruit salad and your complete meal is ready to hit the plates. Yum!
½ cup long-grain rice, uncooked
1 1/8 cups water
1 lb. California blend frozen vegetables
1 tsp. onion salt
Dash of salt, optional
½ cup shredded cheese of your choice
1. Mix together rice, water, vegetables, onion salt, and salt. Place in lightly greased 3-quart slow cooker.
2. Cover. Cook on high 1-3 hours, or until vegetables and rice are cooked to your liking.
3. Cover the top of the vegetables with cheese. Return lid and continue cooking, about 10 minutes, until cheese is melted.
Why not leave omit the salt and use chicken or beef broth?
I just throw potatoes, carrots, and onions in my slow cooker with my roast and let it all cook together. The veggies are tender, and it’s a one-pot meal!

We liked it very much. Will try variations of this next time.
I am feeling quite the failure as my veggies and rice have been in my crockpot for almost the three hours and it has barely started to cook. Now I am going to have to make another side dish and put this one in the fridge and finish cooking it tomorrow. Oh well, in the grand scheme of things it could be worse lol.
