This is not your mother’s cornbread, although it might be similar to your mother’s baked corn or corn pudding. In other words, think “corn” rather than “bread,” and you’ll be on the right track.
We love it because it’s moist and sweet and loaded with whole kernels of corn, and it makes us think of big family Sunday dinners around the dining room table. It pairs especially nicely with ham (or ham loaf, if you’re from Lancaster County), but it would complement just about any meat. We’d add a green vegetable and mixed fruit for a memorable family meal.

Makes 8 servings
Prep. Time: 10 minutes
Cooking Time: 3 ¼ -4 hours
Ideal slow cooker size: 3 ½- 4-qt.
1 qt., or 2 14 ½-oz. cans, whole-kernel corn
1 qt., or 2 14 ½-oz. cans, creamed corn
1 8.5-oz. pkg. corn muffin mix
¼ stick (2 Tbsp.) butter
¼ tsp. garlic powder
2 Tbsp. sugar
¼ cup milk
½ tsp. salt
¼ tsp. pepper
1. Combine all ingredients in greased slow cooker.
2. Cover. Cook on Low 3 ½-4 hours, stirring once halfway through.
