September is National Potato Month, and here in Lancaster County we love our potatoes (and our noodles, corn, bread, rolls, and potpie)! Come to think of it, we’ve never met a starch we didn’t like.

Back to potatoes. We really like that we can make a meal out of baked potatoes. And because we want our potatoes ready and waiting when we arrive home from work or from running the kids around, we especially like that we can do them in the slow cooker. Here’s how:

1. Prick potatoes with fork and wrap in foil
2. Place in slow cooker, cover, and cook on High 2 ½ – 4 hours, or on Low 8-10 hours. Do not add water to slow cooker.

    First a little butter, pepper, dried dill, chives, then some no fat cheddar cheese topped with non fat sour cream and chives on the time. I have this ever Fri night!

    This is a wonderful idea. We like salsa on our baked potatoes. It is much lighter than butter, sour cream, or cheese… and provides a very good flavor. Thanks for the idea.

    We like to have a stuffed tater on vegetarian night. I’ll cook a few garden veggies add some butter, and if I’m totally in the mood I’ll drizzle some alfredo sauce on top. I like to serve with some sort of veggie soup to make it a meal for us. Next time in the slow cooker for sure! Thanks for the idea.

    My mom and I both love baked potatoes and they were a Saturday night tradition at our house. One night, when we were ready to eat, we realized we were out of butter. I poked around in the fridge and had a brainstorm: cottage cheese! Major YUM! The beginning of a new tradition!

    I am so glad to find this. I love baked potatoes, but every time I really want them I don’t have the patience to wait for them to cook and usually end up eating some other side dish. But when I do eat them we do bacon, chives, and sour cream YUMMY!
