Here’s a great way to work ahead and free up stove space when preparing a large company meal. These green beans simmer in the slow cooker and are ready to eat when the roast comes out of the oven.
Try this recipe to determine length of cooking time before you debut it for company. We don’t like under-cooked beans that squeak when we chew them, but maybe that’s just us. You can also reduce the butter and still have a tasty dish.

Makes 4-6 servings
Prep Time: 10 minutes
Cooking Time: 3-4 hours
Ideal slow cooker size: 2-qt.
2 small onions, chopped
Half a stick (1/4 cup) butter
4 cups green beans, fresh or frozen
½ cup salsa
2-3 Tbsp. brown sugar
½ tsp. garlic salt, optional
1. Saute onions in butter in a saucepan.
2. Combine with remaining ingredients in slow cooker.
3. Cover and cook on Low 3-4 hours, or longer, depending upon how soft or crunchy you like your beans.
