We came across this recipe, introduced and explained by Dorie Greenspan in Paris, who speculates that the crumbs may be the latest food trend in Paris. The cocoa crumbs are essentially a streusel that you bake ahead of time and sprinkle on the dessert of your choosing. Think of them as croutons for the salad, or cheese for the spaghetti.
