One of my assistant editors told me an ironic story about herself. . . and gave me permission to share it with you!
Recently, a local church youth group hosted a fundraising meal and auction to raise money for their summer work-and-learn trip to Guatemala. They asked one of our assistant editors to plan and organize the meal for 150. She likes a cooking challenge, so she was game to do it.
She planned a menu to please all kinds of eaters: chicken casserole (with macaroni), mixed greens with vinaigrette, cranberry applesauce, whole wheat rolls with butter and jam, hot fudge cake, vanilla ice cream, toasted walnuts, and decaf coffee.
The youth planned to make the casseroles and cakes, so she emailed the recipes to them. And just before the meal itself, one of the parents asked, “Isn’t this cake recipe supposed to have baking powder in it?” Oh, yes indeed, she (a cookbook editor!) had forgotten to include baking powder in the cake recipe!
Most of the cakes were baked into odd-looking flat pudding masses when her frantic email went out, so the youth laughed and brought them anyway. Properly done with baking powder, the cake should have had a cake layer floating on hot fudge sauce.
Well, the youth dished up dessert at the meal as cool as you please, and none of the guests noticed a thing! Chocolate and ice cream is a crowd pleaser. And guess what: the youth raised most of the money they needed with that one event.

Hot Fudge Cake

Makes 8 servings
Prep. Time: 10 minutes
Cooking Time: 1½-1¾ hours
Ideal Slow Cooker Size: 3½ quart
1¾ cups brown sugar, divided
1 cup flour
3 Tbsp., plus ¼ cup unsweetened cocoa, divided
1½ tsp. baking powder
½ tsp. salt
½ cup skim milk
2 Tbsp. butter, melted
½ tsp. vanilla
1¾ cups boiling water
1. In a mixing bowl, mix together 1 cup brown sugar, flour, 3 Tbsp. cocoa, baking powder, and salt.
2. Stir in milk, butter, and vanilla.
3. Pour into slow cooker sprayed with non-fat cooking spray.
4. In a separate bowl, mix together ¾ cup brown sugar and ¼ cup cocoa. Sprinkle over batter in the slow cooker. Do not stir.
5. Pour boiling water over mixture. Do not stir.
6. Cover. Cook on High 1 ½-1 ¾ hours, or until toothpick inserted in top cake layer comes out clean.
