What a Busy Mom Eats for Breakfast

Do you have a fast breakfast that you rely on? Cold cereal is fast, sure, but in the dead of winter it’s just so. . . cold. It was 28 degrees outside earlier this week as we scrabbled for breakfast.

We found some clever warm breakfast ideas over at Sarah Barry’s blog. The eggs in pepper rings are especially cute. If anyone knows quick breakfast, Sarah does, as the mother of two youngsters who probably doesn’t eat many meals in one sitting.

Do you have any ideas for a nice fast winter breakfast? Warmth is a plus!

    I love a warm muffin and a hot cup of tea. I bake a variety of different muffins and freeze them, then when I [or anyone else] am in the ‘mood for a muffin’, pop one from the freezer into the microwave for about 20 seconds, and you have a warm from the oven tasting muffin. Quick and yummy and nice and warm for these cold winter days.

    I make a quick egg and cheese sandwich nearly every morning as I am loading the car for my sales day. It takes about 2 minutes and I am done!

    Egg & Cheese Sandwich
    I lightly grease with butter a cereal bowl.
    Crack an egg into the bowl and break the yolk, add salt and pepper to taste.
    Cover with paper towel and microwave for 1 minute.
    Top with a piece of cheese.
    Serve on toast

    I beat 2 eggs and add peppers onion a bit of cheese lightly grease a large microwave cup ,pour ingredients in cup and microwave 30 sec, stir and microwave 30 sec to a min . and enjoy!
