Slow Cooker Recipe

Minty Hot Chocolate

MintChoc

The holidays might be over, but we’re not quite ready to give up all the sweet treats we’ve been enjoying over the last several weeks (even if that means a few extra minutes on the treadmill). This Minty Hot Chocolate is one of our favorite winter drinks. There are few pairings we like more than the crisp burst of mint and the creamy richness of chocolate, and this easy drink is a great combination of the two.

Sure, it would be faster to make this hot chocolate on the stove, but on the weekends, we like to throw all the ingredients into the slow cooker mid-afternoon while we’re working on projects around the house. By the time we’re ready for a break, this hot chocolate is piping hot. The clean, bright mint and the lovely depth of the malt chocolate are the perfect complement to our other favorite winter snack—buttered popcorn. Yum!

Makes 6 servings
Prep. Time: 5 minutes
Cooking Time: 2-3 hours
Ideal slow cooker size: 2-to 3-qt. slow cooker

Ingredients
6 small chocolate-covered cream-filled mint patties
5 cups milk
½ cup chocolate malted milk powder
1 tsp. vanilla

1. In your slow cooker, use a wooden spoon to mix the chocolate-covered mint patties with the milk, malted milk powder, and vanilla.
2. Cover your slow cooker. Heat the Hot Chocolate on Low for 2-3 hours.
3. After 1 hour, use a potholder to take off the lid. Stir the drink gently to help melt the mint patties. Then cover your slow cooker.
4. After 1 more hour, stir the drink again to make sure the mint patties have melted.
5. Serve hot.

Serving Suggestion: Use an immersion blender or hand-held mixer to beat the drink until it is frothy. Top each cup with whipped cream, if you wish.
