Still trying to figure out what to do with all that leftover turkey? How about making Hot Turkey Sandwiches?

We just love this recipe because we usually have the ingredients in our kitchen already. Plus, when we use leftover turkey from a previous meal, this recipe takes very little prep time. We just do a little chopping, combine all the ingredients, and let the slow cooker work its magic.

The sandwich is extra cheesy and full of crunchy texture from the celery and onions. It’s just perfect for lunch or a light supper. We like to serve our sandwiches with Tortellini Caesar Salad and Sugar Cookies.

We just can’t help but gobble up the meal (haha).


Hot Turkey Sandwiches
Fix-It and Forget-It 5-Ingredient Favorites, pg. 72

Makes 8 servings
Prep Time: 20-30 minutes
Cooking Time: 4-5 hours
Ideal slow cooker size: 4- or 5-qt.

Ingredients:
6 cups cooked turkey, cut into bite-sized chunks
1½ cups mayonnaise or salad dressing
1 lb. Velveeta cheese, cubed
1 ½ cups celery, chopped

Optional Ingredient:
1 small onion, minced
¼ tsp. salt
⅛ tsp. pepper

1. Combine all ingredients and place in slow cooker.
2. Cover and cook on Low 4-5 hours.
3. Serve in rolls.

    These sandwiches are awesome! I came across a recipe exactly like this a couple years ago and have made these with my leftover turkey since then. Try them! Very delicious!
