Low-Fat Slow-Cooker Barbecue
Fix-It and Forget-It Lightly Revised and Updated, page 79
Makes 12 sandwich servings
1 lb. extra-lean ground beef
2 cups small-dice celery
1 cup chopped onions
1 Tbsp. whipped butter
2 Tbsp. red wine vinegar
1 Tbsp. brown sugar
3 Tbsp. Worcestershire sauce
1 tsp. salt
1 tsp. yellow prepared mustard
1 cup ketchup
2 cups water
1. Brown ground beef, celery, and onions in a nonstick skillet. Stir frequently to break up clumps.
2. Combine all ingredients in slow cooker.
3. Cover and cook on low 2-3 hours.
4. Serve in sandwich rolls.

I hate slow cooker recipe’s that require cooking first. Would love a great BBQ one where I just toss in the cooker, turn on low and come home from work and it’s done.

is the 5 minutes to brown the ground beef really going to inconvenience you THAT much? Its GROUND meat – why would one cook that in a crock pot to begin with? Seems it would be faster and just as tasty cooking it in the skillet. Sounds like a sloppy joe type thing… again putting this in the crockpot seems ridiculous to me. a large chunk of meat, sure, but GROUND meat? C’mon.
I make this in my small slow cooker, with two whole, skinless, boneless chicken breasts (low for 3-4 hours). It doesn’t require any pre-cooking, and the prep time is only about 5 minutes:

For low/no precooking, use the same seasoning profile with a pot roast. For a less lean option, I do a pork shoulder on low with a little water in the bottom and potatoes to keep to pork above the liquid. Sometimes I use a rub, other time just salt, pepper & liquid smoke.
I use your recipes all the time, as for not having to cook hamburger prior to adding to a crockpot, I take a large 10# or more quanitity and precook it all in a large cast iron pot and then portion it into either mason jars and freeze or plastic (if you must) and freeze. It will go into the crockpot frozen or place in fridge overnight and into crockpot in morning it will be mostly thawed. Saves bundles of time and cleanup.
that’s a clever tip – I like things that save time and cleanup!
I’m betting it’s possible to make this kind of sloppy joe/BBQ in this post in the crockpot without browning the ground beef first. I mean, when I make sloppy joes on the stove top, I don’t really bother to brown the meat that much, just cook it, before I add the saucy stuff. I think the flavor in sloppy joes comes from the sauce, more than browning the meat.
This really makes me think of a “sloppy joe” – I guess it’s the ground beef – I think more of a really nice piece of pork, chicken/beef for BBQ -
This is definitely a sloppy joe recipe. I am planning to throw sloppy joe filling in the crock pot later this week so it will have time to simmer, flavors will blend, and it will be ready to eat when we come home from the waterpark.
Would definitely brown the ground beef first to be able to drain the grease before adding the other ingredients.

Candy – that’s an awesome tip! Thanks! I am always intentionally cooking MORE – so that I can freeze and cook less in the long run – but I had not thought to do this with some of my ground beef recipes. Also – thanks to the others for some of the tips on putting meat in frozen – so that I can let it cook longer on the days that I need to. I have a paralytic progressing disease called NMO and have recently had to stop working on doctors orders – so this is NOT as crucial to me as it used to be – but all the time saving, labor saving tips are so helpful – and not having to try to manage many pots at once any more is huge – we will be eating many more easy crockpot meals – especially those that the entire meal is in one pot and I can prep ahead.
