When we’re stumped about what to serve for dessert, we always turn to the tried-and-true cobbler. We usually have the ingredients on hand, it’s easy to prepare and almost everyone we know smiles at the sight of the tasty dish. Just Peachy emphasizes what we like best in a satisfying cobber: hearty oats and sweet fruity flavor. Now isn’t that pleasant, delightful and, well, just peachy?

Makes: 4—6 servings
Prep Time: 2—3 minutes
Cooking Time: 4—5 hours
Ideal Slow Cooker Size: 3-Quart

Ingredients:
4 cups sliced peaches, fresh or canned (if using canned peaches, reserve the juice)
⅔ cup rolled dry oats
⅓ cup all-purpose baking mix
½ cup sugar
½ cup brown sugar
½ tsp. cinnamon, optional
½ cup water or reserved peach juice

1. Spray inside of slow cooker with nonstick cooking spray.

2. Place peaches in slow cooker.

3. In a bowl, mix together all dry ingredients. When blended, stir in water or juice until well mixed.


4. Spoon batter into cooker and stir into peaches, just until blended.

5. Cover and cook on Low 4—5 hours.

6. Serve warm with vanilla ice cream or frozen yogurt.

    I’m going to make this dee-licous looking cobbler-I have a large slow cooker so I’ll double the recipe-Also I have the spiral cook book, smaller one, and it’s not in that one..Now it is:)

    Sounds good. I only see a box where the amounts for the oats and baking mix is supposed to be. can anyone tell me. Also i dont have baking mix, what else can i use. thanks

      Hi Tina. You will need 2/3 cup of rolled dried oats and 1/3 cup all-purpose baking mix. If you don’t have baking mix on hand, try using Bisquick. Thanks!

      My issue is i dont have bisquick. I will try to do a search to find a recipe that is an equivilent to biskquick. any suggestions?

    Ginny I don’t think so- believe they’d cook enough in the mixture.
    I’m going to make this tonight but going to ‘tweak’ it a bit- adding frozen rhubarb, and bake it in my toaster over in a stone casserole..Have fresh French Vanilla ice cream in the freezer, just calling to be put on top of this.I’ll let you know how it turns out-I love making up my own recipes, along the way:)

    We are still enjoying the peach/cranberry I made the other day- it’s soo dee-licous-looking now for frozen rhubarb for the next one..

    Liz- Bisquick is an all purpose flour ‘like’ that you can make biscuits from, all sorts of good things- GOOGLE bisquick and that might help you to find a smilar product in your area- Hope this helps..

    I don’t keep bisquick on hand either. Doesn’t bisquick have shortning and flour together or also baking powder?

    I might try agave nectar or the splenda too.

    Every1 SHOULD keep Bisquick on hand at all times. It make the BEST dumplings, pancakes, biscuits, the list goes on. I use it all the time..
    Cant wait to make this peachy yummy.

    I’m happy to see a slow cooker cobbler/crisp. I’ll use More With Less Cookbook’s recipe for Baking Mix to replace the Bisquick. I’ll use apples this time.

    For those looking for Bisquick, you can substitute any biscuit recipe minus the wet ingredients. Most make about 2 cups of mix. You can divide as you need to or store in the frig for later.
